Producing Timolio requires a careful eye for detail. The thyme must be added to the press at exactly the right moment so that its flavour does not become overpowering, but instead complements the quality of the olive oil beautifully. At the oil mill, we personally ensure that only the freshest thyme is used. This guarantees that you taste the real herb in the oil rather than an artificial substitute.

Tip for creamy pumpkin soup

Ingredients: one onion, one garlic clove, half a Hokkaido pumpkin, one-quarter of a can of coconut milk, salt, pepper, Tradizionale olive oil and thyme olive oil.

Method: Finely chop the onion and garlic and gently sauté them in a pot with Tradizionale olive oil. Cut the pumpkin into pieces, add it to the pot and pour in 0.5 litres of water and the coconut milk. Season with salt and pepper and cook for approximately 25 minutes. Blend until smooth and creamy. Serve with sourdough bread and generously drizzle with thyme olive oil. Buon appetito!
